Spaghetti with Plum Tomatoes and Basil
Makes 4 portions

2 tablespoons of olive oil
1 onion, peeled and chopped
1 teaspoon of brown sugar
1 teaspoon of balsamic vinegar
1 clove of garlic, crushed
A handful of basil leaves, torn into pieces
4 ripe plum tomatoes, skinned, de-seeded and chopped
Salt and freshly ground black pepper
1x 400g (14oz) tin of chopped tomatoes
200g (7oz) of spaghetti
Heat the oil in a saucepan and sauté the onion for five minutes until softened but not coloured. Add the garlic and cook for 1 minute.
Add the remaining ingredients, (except the spaghetti, which you boil separately, see below) cover with a lid and cook over a medium heat for about 20 minutes.
Meanwhile, bring a large pan of lightly salted water to the boil. Add the spaghetti and cook according to the timing instructions on the packet. Drain and serve topped with the sauce.
N.B. You can use any type of pasta for this simple and wholesome recipe.
The sauce can be frozen separately if necessary
